4 medium trout
3oz (85g) Flora pro.activ with olive oil spread
2 tbsp finely chopped mixed fresh herbs eg parsley, chives and dill
1 tsp finely grated lemon rind
Black pepper
1lb (1450g) new potatoes
12oz (350g) sweetcorn and 5oz (150g) sugar peas, to serve
Lemon wedges and parsley sprigs, to garnish
Method
1. With a sharp knife, make several diagonal slashes along each side of the trout.
2. Blend together the Flora pro.activ, herbs, lemon rind and seasoning. Spread the mixture over the trout, pressing it into the cuts.
3. Lay the fish on a large square piece of foil and wrap loosely.
4. Cook in a preheated oven at 180°C, 350°F, Gas 4 for 25-30 minutes until cooked through.
5. Garnish with parsley and lemon wedges and serve with the potatoes and vegetables.
